Grilled Honey And Chile-Glazed Duck Breast

Ingredients
  1. 4 duck breasts
  2. ½ cup honey
  3. 1 poblano chile pepper, seeded and julienned
  4. 1 ancho chile pepper, chopped
  5. 3 tbsps olive oil
  6. 6 cloves garlic, slivered
  7. ¼ cup sherry wine vinegar
  8. Salt and freshly ground black pepper to taste
  9. Granulated garlic to taste
  10. Cumin seed to taste
  11. Honey and chile sauce (see recipe)
  12. Fresh cilantro leaves for garnish
Instructions
  1. Prepare a fire in a charcoal grill.
  2. In a small saucepan, heat olive oil over medium heat.
  3. Add slivered garlic and chiles and saute 2-3 minutes.
  4. Add vinegar and reduce volume by half.
  5. Add honey and remove from heat.
  6. Let rest 20 minutes to infuse flavors.
  7. Return sauce to stovetop over medium heat.
  8. Heat through then strain sauce into a clean bowl.
  9. Season to taste using salt and pepper then set aside.
  10. Season duck with salt, pepper, granulated garlic and cumin.
  11. Grill, skin side down, for 5-7 minutes.
  12. Baste with glaze, turn and grill 2-3 minutes or until done.
  13. Slice duck breasts on the bias.
  14. Spoon honey and chile sauce onto individual serving plates.
  15. Arrange duck slices on top of sauce and garnish with fresh cilantro.
